Crunchy Lentil Salad Recipe

  2. Bring a saucepan of lightly salted water to a boil and add in lentils.
  3. Reduce heat and simmer till crisp-tender, about 30 min.

  5. Drain the lentils, rinse them under cool water and pat dry.
  6. Place them in a salad bowl and add in all the remaining ingredients.
  7. Toss well to combine.
  8. 3.
  9. Cover and chill for several hrs (to develop the flavors) before serving.
  10. 4 to 6 portions.
