Apple Pecan Cake With Cinnamon Frosting

  1. Preheat oven to 325 degrees.
  2. Grease and flour a tube pan.
  3. In a large mixing bowl, beat eggs until frothy.
  4. Beat in sugar, salt, vanilla, and vegetable oil, lemon juice and lemon rind.
  5. Beat until well blended and set aside.
  6. In a separate bowl, measure out 3 cups of flour.
  7. Add bakingsoda, cinnamon and nutmeg and sift ingredients together.
  8. Gradually beat the dry ingredients into sugar-egg mixture until well blended.
  9. Stir in the grated apples and chopped nuts.
  10. Pour cake batter in pan and bake for 1 1/2 hours or until done.
  11. Cool in pan for a few minutes then invert onto plate allow to cool completly.
  12. In a large bowl, combine all frosting ingredients except pecans.
  13. Beat until fluffy.
  14. Spread onto cool cake.
  15. Sprinkle top with chopped pecans.
  16. Garnish base with whole pecans.
