Apple Pecan Cake With Cinnamon Frosting
- 2 eggs
- 2 cups sugar
- 12 teaspoon salt
- 2 teaspoons vanilla extract
- 1 12 cups vegetable oil
- 2 tablespoons lemon juice, strained
- 1 tablespoon lemon rind
- 3 cups plain flour
- 1 14 teaspoons baking soda
- 1 teaspoon cinnamon
- 14 teaspoon ground nutmeg
- 3 cups granny smith apples, peeled, cored and grated
- 2 14 cups pecans, chopped
- 4 12 ounces cream cheese, softened
- 34 cup sweet butter
- 1 12 cups confectioners' sugar
- 34 teaspoon cinnamon
- 34 teaspoon vanilla
- 34 cup pecans, chopped
- 40 whole pecans
- Preheat oven to 325 degrees.
- Grease and flour a tube pan.
- In a large mixing bowl, beat eggs until frothy.
- Beat in sugar, salt, vanilla, and vegetable oil, lemon juice and lemon rind.
- Beat until well blended and set aside.
- In a separate bowl, measure out 3 cups of flour.
- Add bakingsoda, cinnamon and nutmeg and sift ingredients together.
- Gradually beat the dry ingredients into sugar-egg mixture until well blended.
- Stir in the grated apples and chopped nuts.
- Pour cake batter in pan and bake for 1 1/2 hours or until done.
- Cool in pan for a few minutes then invert onto plate allow to cool completly.
- In a large bowl, combine all frosting ingredients except pecans.
- Beat until fluffy.
- Spread onto cool cake.
- Sprinkle top with chopped pecans.
- Garnish base with whole pecans.
