Asian Pork Chops With Chinese Paprika Sauce Recipe
- 1/4 c. soy sauce
- 2 Tbsp. sesame oil
- 2 x garlic cloves minced
- 1/2 tsp anise seed grnd in a spice mill to make a pwdr
- 6 x pork loin chops, 1/2" thk - (abt 6 ounce ea)
- 1 c. chicken broth
- 2 x roasted red peppers quartered
- 5 x apricots - (abt 1/2 lb) halved, pitted (or possibly 5 dry apricots)
- 2 x garlic cloves crushed
- 1 1/2 tsp finely-grated lemon zest Soy sauce to taste Jasmine rice for serving
- To make the Pork Chops: In a small bowl combine soy sauce, sesame oil, garlic, and anise pwdr.
- Place pork chops in a large plastic resealable bag.
- Pour marinade over chops; close bag.
- Marinate in refrigerator for 2 to 3 hrs, turning occasionally.
- Meanwhile, make the Sauce: In a 2-qt saucepan place chicken broth, roasted red peppers, apricots, garlic, and lemon zest.
- Simmer over low heat for 30 min, stirring occasionally.
- In a blender or possibly food processor, puree till smooth and thickened.
- Adjust consistency by adding more chicken stock to thin or possibly using heat to reduce and thicken, as needed.
- Add in soy sauce, to taste.
- Keep hot.
- Remove chops from bag; throw away marinade.
- Place chops in center of cooking grate.
- Grill 12 to 16 min for medium (160 degrees) or possibly 17 to 20 min for well-done (170 degrees), turning once halfway through grilling time.
- Serve each chop with some sauce and jasmine rice.
- This recipe yields 6 servings.
- Wine Recommendation: A Gamay Beaujolais Nouveau will have plenty of fruit to support this saucy dish.
- Beer Recommendation: Try a dry, pale lager from Southeast Asia, such as Thailand"s Singha, to celebrate each distinct flavor in this dish.
