Chocolate Chip Snowballs (Microwave) Recipe
- 3/4 c. butter, softened
- 1 tbsp. water
- 1 teaspoon vanilla extract
- 1/2 teaspoon almond extract
- 1/3 c. sugar
- 1/8 teaspoon salt
- 1 3/4 c. all purpose flour
- 1 pkg. (6 ounce.) semi sweet chocolate chips
- 1 c. minced pecans, optional
- Confectioners' sugar
- In large mixer bowl; combine butter, water, vanilla, almond extract, sugar and salt.
- Stir in flour, pecans if you like and chocolate chips to create a stiff dough.
- Divide dough into quarters.
- Divide each quarter into 10 to 12 pcs and shape into 1-inch balls.
- On round microwave proof plate, arrange 6 balls in a circle.
- Microwave on high approximately 1 1/2 min till cookies are set.
- If they seem to be baking unevenly, try them on a microwave trivet.
- Cold on wire racks.
- Repeat with remaining cookies.
- Roll in confectioners' sugar.
- Makes approximately 3 to 3 1/2 dozen.
