Einar's Lobster Chowder
- 1 tbsp. olive oil
- 1/2 cup chopped onion
- 1/2 cup diced carrot
- 1 tsp. Old Bay Seasoning
- 1 bottle (8 oz.) clam juice
- 1 can (14-1/2 oz.) chicken broth
- 1-1/2 cup shredded potato
- 1 cup frozen whole kernel corn
- 1/2 lb. cooked lobster meat, roughly chopped
- 1/2 cup whole milk
- 1/2 tsp. salt
- 1/2 tsp. white pepper
- 1 dash hot sauce,
- to taste
- Heat olive oil in a large saucepan over medium heat.
- Add onion and carrot; cook and stir for about 3 minutes.
- Add Old Bay Seasoning, clam juice and chicken broth.
- Bring to a boil.
- Add potato and frozen corn.
- Reduce the heat to medium-low.
- Cover and simmer for 10 minutes or until the potato is tender, stirring several times.
- Stir in lobster, milk, salt, white pepper and hot sauce.
- Heat for 2-3 minutes or until hot.
