Einar's Lobster Chowder

  1. Heat olive oil in a large saucepan over medium heat.
  2. Add onion and carrot; cook and stir for about 3 minutes.
  3. Add Old Bay Seasoning, clam juice and chicken broth.
  4. Bring to a boil.
  5. Add potato and frozen corn.
  6. Reduce the heat to medium-low.
  7. Cover and simmer for 10 minutes or until the potato is tender, stirring several times.
  8. Stir in lobster, milk, salt, white pepper and hot sauce.
  9. Heat for 2-3 minutes or until hot.
