Jijimi (Korean Savory Pancakes) with Chinese Chives and Cheese
- 1 bunch Chinese chives
- 1/2 Onion
- 1 bunch Melting cheese (for pizza)
- 80 ml White flour
- 20 ml Katakuriko
- 1 Egg
- 2 tsp Chinese soup stock (optional)
- 100 ml Water
- 1 tbsp White sesame seeds (optional)
- 1 tbsp Oil
- 1 tbsp Sesame oil
- Combine all ingredients listed with into a bowl.
- Mix very well.
- Cut chives into bite-size pieces, and thinly slice the onion.
- Mix these cut up vegetables and melting cheese into from step 1.
- Mix everything evenly.
- Add both oils in a pre-heated pan.
- Thinly pour half the batter and cook both sides over medium heat.
- Turn over once it is nicely browned on one side.
- Once browned, enjoy with your favorite sauce Some ideas: ponzu + gochujang + hot sesame oil, soy sauce + vinegar + hot sesame oil.
- I personally don't separate the batter in two batches and just cook the whole thing at once It gets crispy so turning it over is not as hard as you think!
