Veggie & Rice Casserole

  1. Chop all vegetables by hand or in a food processor.
  2. Heat olive oil and cook garlic until golden brown and fragrant.
  3. Add onion and saute.
  4. When cooked, add carrots and broccoli.
  5. Add cream of mushroom soup and soy milk.
  6. Cook until it become smooth, then add rice.
  7. Mix well.
  8. Sprinkle salt & pepper to taste, if desired.
  9. Pour the mixture into a casserole dish and put mayonnaise on top (using fine-tipped mayonnaise dispensor or plastic bag with a hole at one corner).
  10. Bake at 375F for 25-30 minutes.
