Plantain Pancakes
- 2 large ripe plantains
- 1 small onion
- 3 Hot chillis
- 1 clove of garlic
- 1 finger of ginger
- 1 1/2 cup all-purpose flour
- 1 salt
- Combine all the ingredients with the exception of the flour in a blender
- Blend until completely smooth
- Add the flour slowly and stir till smooth.
- Add extra flour if needed to achieve a thick consistency.
- Spread a thin layer of olive oil in a large frying pan.
- Fry the mixture as you would a pancake
- Enjoy!
- It's great with peanut butter!
