Salad Nicoise

  1. Drain tuna and place oil in a medium bowl.
  2. Add shallot, vinegar, lemon juice, mustard and honey, whisking to combine.
  3. Season with salt and pepper.
  4. Place greens on a platter or two plates.
  5. Arrange tuna, green beans, potatoes, eggs, tomatoes and olives on top.
  6. Drizzle with dressing before serving.
