Broccoli Supreme
- 1 1/2 lb. fresh broccoli
- 1 c. water
- 1/2 tsp. salt
- 1 can cream of chicken soup
- 1/2 c. sour cream
- 1/4 c. grated carrot
- 1 Tbsp. grated onion
- 1 Tbsp. all-purpose flour
- 1/2 tsp. pepper
- 3/4 c. herb seasoned stuffing mix
- 2 Tbsp. margarine
- Trim off large leaves of broccoli.
- Remove tough ends of lower stalks.
- Wash broccoli.
- Separate flowerets and coarsely chop stalks.
- Bring water to a boil; add salt and broccoli.
- Cover, reduce heat and simmer 5 minutes or until crisp-tender; drain. Set aside.
- Combine soup and next 5 ingredients, mixing well. Fold in broccoli; pour into greased 2-quart casserole dish. Combine stuffing and melted margarine.
- Sprinkle around edges of casserole.
- Bake, uncovered, at 350u0b0 for 30 minutes.
- Yield: 8 servings.
