Cheesy Polenta

  1. In a large saucepan bring 2-3/4 cups water to boiling.
  2. In a bowl combine cornmeal, salt, and cold water.
  3. Slowly add cornmeal mixture to boiling water in saucepan, stirring constantly.
  4. Cook and stir until mixture returns to boiling.
  5. Add shredded Parmesan cheese; cook, uncovered, over low heat about 5 minutes or until thick, stirring occasionally.
