Alaska King Crab Stir Fry Recipe
- 12 ounce king crab split legs thawed if necessary
- 2 c. sliced fresh mushrooms
- 1 c. vertically sliced onion
- 1 sm garlic clove chopped
- 2 Tbsp. oil
- 1 c. fresh Chinese pea pods
- (or possibly thawed 6-ounce pkg frzn Chinese pea pods)
- 3/4 c. diced tomato
- 1 tsp cornstarch
- 1 Tbsp. cool water
- Cut crab legs into 2 1/2- to 3-inch pcs.
- Saute/fry mushrooms, onion and garlic in oil till slightly softened.
- Add in crab, pea pods and tomato; stir-fry till vegetables are crisp-tender and crab is thoroughly heated.
- Blend cornstarch and water; stir into pan juices.
- Cook and stir till juices are thickened and clear.
- This recipe yields 2 servings.
- Recipe can be doubled.
- Comments: About 6 ounces Alaska King crab meat can be substituted for the split crab legs; one green pepper, sliced vertically, can be substituted for the Chinese pea pods.
