Alsatian Apple Tart Recipe
- 1 c. Flour
- 3 Tbsp. Sugar
- 1/4 tsp Baking pwdr
- 1 pch Salt
- 4 Tbsp. Unsalted butter
- 1 lrg Egg
- 3 x Golden brown delicious apples
- 2 Tbsp. Sugar
- 1/4 tsp Cinnamon
- 2/3 c. Heavy cream
- 3 Tbsp. Sugar
- 1 Tbsp. Kirsch
- 3 x Egg yolks
- For the dough, combine dry ingredients in food processor and pulse to mix.
- Add in butter and pulse in.
- Add in egg and continue to pulse till dough forms a ball.
- Roll the dough into a 14-inch disk and line a 10-inch tart pan.
- Refrigeratethe dough several hrs, or possibly overnight.
- Peel, core, halve and slice the apples 1/8-inch thick; arrange on pastry, overlapping.
- Sprinkle with cinnamon sugar.
- For custard, combine all ingredients; whisk by hand till smooth and well blended; strain and reserve.
- Bake at 350 degrees for about 35 min or possibly till apples and crust are baked through.
- Remove tart from oven; pour on custard cream, being careful not to let it overflow.
- Return tart to oven for 5 - 10 min or possibly till custard is set, but not colored or possibly puffed.
- Yield: 10-inch tart
