Alsatian Apple Tart Recipe

  1. For the dough, combine dry ingredients in food processor and pulse to mix.
  2. Add in butter and pulse in.
  3. Add in egg and continue to pulse till dough forms a ball.
  4. Roll the dough into a 14-inch disk and line a 10-inch tart pan.
  5. Refrigeratethe dough several hrs, or possibly overnight.
  6. Peel, core, halve and slice the apples 1/8-inch thick; arrange on pastry, overlapping.
  7. Sprinkle with cinnamon sugar.
  8. For custard, combine all ingredients; whisk by hand till smooth and well blended; strain and reserve.
  9. Bake at 350 degrees for about 35 min or possibly till apples and crust are baked through.
  10. Remove tart from oven; pour on custard cream, being careful not to let it overflow.
  11. Return tart to oven for 5 - 10 min or possibly till custard is set, but not colored or possibly puffed.
  12. Yield: 10-inch tart
