Turkey Roll-Ups
- 1 pkg. (120 g) Stove Top Lower Sodium Stuffing Mix for Chicken
- 1/4 cup each finely chopped carrots and red peppers
- 4 turkey cutlets (1 lb./450 g)
- 1 egg, beaten
- 1 pouch Shake'N Bake Extra Crispy Original Coating Mix
- Heat oven to 400F.
- Prepare stuffing as directed on package, adding vegetables to water with the stuffing mix.
- Spread stuffing mixture onto turkey, just to within 1/4 inch of edges.
- Roll up each cutlet; tie with kitchen string to secure.
- Dip in egg then in coating mix, tunring to evenly coat each roll-up.
- Place on baking sheet.
- Bake 25 to 30 min.
- or until done (170F).
- Remove string before serving.
