Coffee Swirl Yogurt Cake

  1. Preheat oven to 350 degrees.
  2. Grease loaf pan.
  3. Mix flour, salt, baking soda and baking powder.
  4. Beat butter, sugar and vanilla extract in large bowl until fluffy.
  5. Add eggs, one at a time, beating well after each addition.
  6. Beat in flour mixture alternately with yogurt.
  7. Remove 1 c of the batter and stir in the instant coffee.
  8. Pour half of the plain batter into the pan.
  9. Drop coffee batter by spoonfuls onto patter in pan.
  10. Add remaining batter and swirl deep with wooden-spoon handle for marbled effect.
  11. Bake @ 350 degrees 1 - 1 1/4 hours or until toothpick inserted in center comes out clean.
  12. Cool 10 minutes.
  13. Loosen sides and remove from pan.
  14. Cool before slicing.
