Savory sesame seed cheese crisps

  1. In a bowl, blend flour, salt , sugar and baking soda.
  2. Add butter one piece at a time until it resembles coarse crumbs.
  3. Add goat cheese, half and half and mix until a soft dough forms.
  4. Turn dough onto lightly floured surface and shape into a flattened rectangle, divide in two.
  5. Wrap both pieces tightly with plastic wrap and refrigerate one hour.
  6. On well floured surface after one hour, roll dough out to about 1/8" thick, doing one half at a time.
  7. Place rolled dough on parchment lined baking sheet and freeze 20 minutes until firm.
  8. Preheat oven to 350F.
  9. Prepare another baking tray lined with parchment.
  10. With a pastry cutter or pizza cutter, cut out triangular shapes.
  11. Does not have to be perfectly equal in size.
  12. Beat egg and brush triangles with egg wash, sprinkle with sesame seeds then pink Himalayan sea salt.
  13. Bake 15 -18 minutes achieving a nice golden brown.
  14. Crisps can be stored room temperature in air tight container up to 3 days.
  15. Serve these with a cheese and crackers plate with fruit.
