Savory sesame seed cheese crisps
- 2 3/4 cup flour
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1/4 cup sugar
- 1 cup unsalted butter, ( 2 sticks ) softened, cut into pieces
- 8 oz goat cheese
- 1/4 cup half and half
- 1 large egg
- 2 tbsp sesame seeds
- 1 tbsp pink Himalayan sea salt
- In a bowl, blend flour, salt , sugar and baking soda.
- Add butter one piece at a time until it resembles coarse crumbs.
- Add goat cheese, half and half and mix until a soft dough forms.
- Turn dough onto lightly floured surface and shape into a flattened rectangle, divide in two.
- Wrap both pieces tightly with plastic wrap and refrigerate one hour.
- On well floured surface after one hour, roll dough out to about 1/8" thick, doing one half at a time.
- Place rolled dough on parchment lined baking sheet and freeze 20 minutes until firm.
- Preheat oven to 350F.
- Prepare another baking tray lined with parchment.
- With a pastry cutter or pizza cutter, cut out triangular shapes.
- Does not have to be perfectly equal in size.
- Beat egg and brush triangles with egg wash, sprinkle with sesame seeds then pink Himalayan sea salt.
- Bake 15 -18 minutes achieving a nice golden brown.
- Crisps can be stored room temperature in air tight container up to 3 days.
- Serve these with a cheese and crackers plate with fruit.
