Creamy Spinach And Bacon Soup Recipe

  1. In large saucepan, fry bacon over medium heat till crisp.
  2. Drain; reserve 3 Tbsp.
  3. bacon drippings in pan.
  4. Saute/fry onion in bacon drippings till tender.
  5. Sprinkle with flour and nutmeg; cook and stir till mix is smooth and bubbly.
  6. Gradually add in lowfat milk, chicken broth and potato flakes.
  7. Cook till mix is slightly thickened, about 5 min, stirring frequently.
  8. Add in bacon, cheese and spinach.
  9. Heat gently, stirring constantly, till cheese is melted.
  10. Don't boil.
  11. Makes 5 (1 c.) servings.
