Lime Coconut Bread

  1. Heat oven to 350F.
  2. Grease bottom and sides and lightly flour 8x4-inch loaf pan; set aside.
  3. Combine flour, sugar, baking powder and salt in bowl; set aside.
  4. Combine all remaining bread ingredients in another another bowl; mix well.
  5. Add flour mixture to just buttermilk mixture; mix just until moistened.
  6. Spread into prepared pan.
  7. Bake 40-50 minutes or until light golden brown and toothpick inserted in center comes out clean.
  8. Let cool 10 minutes in pan; remove to cooling rack.
  9. Cool completely.
  10. Combine powdered sugar and 1 tablespoon lime juice in bowl; mix well.
  11. Drizzle over bread; let stand until glaze is set.
