Lime Coconut Bread
- 1 3/4 cups all-purpose flour
- 1/4 cup sugar
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 1/2 cup buttermilk*
- 1/2 cup cream of coconut
- 1/4 cup Land O Lakes Margarine, melted
- 1 Land O Lakes Egg, slightly beaten
- 1 tablespoon fresh lime juice
- 2 teaspoons freshly grated lime zest
- 1/2 cup powdered sugar
- 1 tablespoon fresh lime juice
- Heat oven to 350F.
- Grease bottom and sides and lightly flour 8x4-inch loaf pan; set aside.
- Combine flour, sugar, baking powder and salt in bowl; set aside.
- Combine all remaining bread ingredients in another another bowl; mix well.
- Add flour mixture to just buttermilk mixture; mix just until moistened.
- Spread into prepared pan.
- Bake 40-50 minutes or until light golden brown and toothpick inserted in center comes out clean.
- Let cool 10 minutes in pan; remove to cooling rack.
- Cool completely.
- Combine powdered sugar and 1 tablespoon lime juice in bowl; mix well.
- Drizzle over bread; let stand until glaze is set.
