Maple Sweet Potato Puree

  1. Preheat oven to 375F
  2. Peel and cut the sweet potato into chunks.
  3. Combine the sweet potato chunks, 1/4 cup maple syrup, 1/4 cup olive oil, 2 teaspoons salt, and 1 tsp pepper and place in shallow baking dish.
  4. Bake in the oven for 35-40 minutes, or until sweet potatoes are soft.
  5. Check the sweet potatoes after 15 minutes and stir if needed.
  6. About 10 minutes before the sweet potatoes are done, thinly slice the onion.
  7. Melt 2tbsp butter in a medium sauce pan.
  8. Add 2 tbsp olive oil, the sliced onion, 2 tbsp maple syrup, and season with salt and pepper.
  9. Saute onions for about 2 minutes or until deep golden brown.
  10. If pan becomes dry, add 1 tbsp water.
  11. Remove the onions from the stove and set aside.
  12. Put the sweet potato mixture in a food processor and pulse until just blended.
  13. Add half the caramelized onions.
  14. Pulse a few times until you have the desired consistency, adding 1 tbsp water at a time if needed for a smoother puree.
  15. Fold in the remaining onions, reserving a few for the garnish.
  16. Serve in a warm dish garnished with the remaining caramelized onions on top for garnish.
