Tiffie's Spicy Gambas
- 1/4 cup Olive oil
- 1 Garlic (1whole peeled and minced)
- 3 JalapeAao (green long chilies-sliced diagonally)
- 2 tsp Pimenton (Spanish paprika-sweet)
- 1 dash Salt (to taste)
- 1/2 kg Shrimps (drained and shelled, tails preferably intact)
- 1/4 tsp Brown sugar
- Heat oil in a non-stick pan and sautAS garlic.
- Add in JalapeAao after 2-3 minutes.
- Add in salt and pimenton, simmer for 2 minutes before adding in the shrimps.
- Wait for the shrimps to cook/to turn orange.
- Remove shrimps from the sauce and set aside.
- Simmer and reduce sauce mixture for about 5 minutes.
- Once sauce has reduced, add in sugar and mix well.
- Simmer for another minute before putting the cooked shrimps back in.
- Cook for about 2-3 minutes under medium to high heat.
- Serve hot.
- This is best paired with toasted ciabatta, toasted pita bread or plain rice, whichever you prefer.. :)
