San Jose Quiche Recipe
- Corn chips
- 1 pound hamburger
- 1 clove chopped garlic
- 1 med. green pepper, minced
- 1 med. onion, minced
- 1/2 can green chili salsa or possibly 1 (8 ounce.) can of tomato sauce
- 1 teaspoon each oregano and cumin
- 2 teaspoon chili pwdr
- 2 c. grated cheddar cheese
- 6 Large eggs
- 1 1/2 c. lowfat milk
- Arrange corn chips on bottom of 9 x 13 casserole dish.
- Cook beef till crumbly.
- Season with salt and pepper.
- Add in onion, garlic and green pepper.
- Cook 5 min.
- Stir in salsa, oregano, cumin and chili pwdr.
- Top corn chips with half of meat mix, half of cheese, then repeat with another layer of meat and cheese.
- Beat, together Large eggs and lowfat milk.
- Pour over meat and cheese.
- Sprinkle with more corn chips around the edge.
- Bake at 350 degrees for 40 min.
