Peanut Butter and Chocolate Cheesecake of Dooom
- 5 tablespoons butter
- 1 23 cups graham cracker crumbs
- 24 ounces cream cheese
- 3 eggs
- 1 cup sugar
- 1 -1 12 cup peanut butter
- 1 (12 ounce) bag semi-sweet chocolate chips
- 12 cup baking chocolate
- Preheat the oven to 350 F.
- Melt the butter.
- Combine with the Grahm Cracker Crumbs and mix until throughly coated.
- In a spring form pan, line the bottom with the mixture and pack it firmly.
- Tilt the pan and line the sides approximately 1/2 way up with the crust mixture and pack it.
- Bake for 5 minutes.
- Set the crust aside to cool.
- In a large bowl, mix the Cream Cheese, Sugar, Eggs, and Peanut butter with an electric mixer until smooth.
- Cover the bottom of the crust with approximately 1/4 of the Chocolate Chips.
- Fold the remainer of the Chocolate Chips into the cake mixture.
- Bake for 60-70 minutes.
- When the top of the cake is golden brown, the cheesecake is done.
- Allow to cool to room temperature.
- Melt the Bakers Chocolate either in a microwave or with a double boiler.
- Remove the sides of the springform pan and cover the cheesecake with the melted chocolate.
- Allow to chill for a minimum of about 4 hours.
