Sausage Quiche

  1. This quiche is a great breakfast treat.
  2. Use chorizo or hot Italian sausage for a spicy pick me up.
  3. Prepare pie crust according to product instructions.
  4. Set aside to cool while preparing filling.
  5. Keep oven heated, adjusting to 375F after pie shell completed.
  6. Remove casing from sausage.
  7. In a skillet, add oil and onion, cooking over a medium heat.
  8. Add sausage.
  9. Break apart sausage into small pieces so it will brown evenly.
  10. When onions start to become translucent and the sausage begins to brown, add the diced bell pepper, paprika and ground pepper.
  11. Once sausage is cooked, remove from heat and drain excess oils.
  12. Allow to cool a bit before filling the prepared pie shell.
  13. If the filling is too hot, the cheese will melt and the egg cook while assembly is still in progress.
  14. In a bowl, add eggs and salt.
  15. Beat the eggs well.
  16. Spoon half the filling into the pie shell, spreading it evenly about.
  17. Sprinkle about 1/4 cup of the cheese over the filling.
  18. Spoon the remaining filling into the pie shell.
  19. Pour beaten eggs into pie shell, allowing them to settle into the pan.
  20. Sprinkle remaing cheese on top.
  21. Bake 30 minutes.
  22. Remove from oven, allow to cool 5 - 10 minutes before serving.
  23. Add a scoop of salsa on the side.
