Red Lentil And Bacon Soup

  1. In a medium pot, crisp the bacon on medium heat.
  2. Then add the parsnip and onion.
  3. Cook together for 3-5 minutes.
  4. Next add the garlic and cook about 3 minutes more.
  5. After adding the broth and water, stir in the lentils.
  6. Allow to simmer for 30-40 minutes stirring occasionally.
  7. Once the soup has thickened up, combine the paprika, turmeric and salt.
  8. Pour all the contents into a blender and liquify for 10 seconds.
  9. Transfer to bowls and serve hot.
  10. Garnish with a few mushroom slices or a squiggle of ketchup.
