Mediterranean Salmon

  1. Preheat oven to broil.
  2. Pat salmon fillets dry.
  3. Add salt and pepper.
  4. In a large skillet, on medium high heat, pour in a little olive oil, coating the pans bottom.
  5. Then add in the salmon fillets and cook until the bottom of the salmon has turned light pink (about 1/4 inch).
  6. Top salmon fillets with tomatoes, onions, and black olives.
  7. Season with salt and dry basil.
  8. Then sprinkle on olive oil, lemon juice, & balsamic vinegar.
  9. Place salmon in the oven and broil for 12-13 minutes.
  10. Remove salmon from the oven, let cool for 1-2 minutes and serve!
  11. Tonight I served mine with Japanese yams, & sauteed zucchini!
