Black Bean And Mango Salsa Recipe
- 1 can black beans - (16 ounce) rinsed, liquid removed
- 1 pkt frzn whole kernel corn - (10 ounce) thawed
- 1 c. minced ripe mango
- 1/2 c. minced red pepper
- 1/3 c. minced cilantro
- 1/3 c. minced red onion
- 1/4 c. lime juice
- 1 env Good Seasons Italian Salad Dressing Mix
- Mix all ingredients in large bowl.
- Chill several hrs or possibly till chilled.
- Serve with tortilla chips or possibly grilled chicken.
- This recipe yields about 5 c..
- Special Extra: Add in 1 1/2 c. cooked Minute Brown Rice to bean mix before refrigerating.
- Yield: 5 c.
