Chicken Bean Bake
- 2 (16 ounce) cans baked beans
- 12 cup peach preserves
- 14 cup ketchup
- 14 cup finely chopped onion
- 12 teaspoon soy sauce
- 4 chicken quarters
- Position the rack in the center of the oven and preheat to 350.
- In a casserole dish, blend together the beans, preserves, ketchup, onion, and soy sauce.
- Add the chicken pieces and turn to coat them on all sides.
- Cover and bake for about 60 minutes, or until the chicken is fork tender and cooked through.
- Uncover and bake for 15 minutes more, until lightly browned on the top.
