Pecan Christmas Cake Recipe
- 1 pound light brown sugar, firmly packed
- 6 Large eggs
- 1 teaspoon baking pwdr
- 1 pound all-purpose flour
- 1/2 pound butter
- 1 pound seeded raisins
- 1/2 teaspoon salt
- 1 pound whole pecans
- Cream butter and sugar.
- Add in beaten Large eggs.
- Use a little flour to coat raisins.
- Add in salt and baking pwdr to flour.
- Add in raisins and flour to egg mix.
- Add in nuts.
- Bake in a tube pan lined with greased paper.
- Bake at 300 degrees for 2 1/2 hrs.
- Makes 5 pounds.
