Quick Savoury Pancakes
- 4 ounces plain flour
- 1 pinch salt
- 1 egg
- 2 cups milk
- 2 tablespoons oil
- 2 cups bolognese sauce
- 2 cups tomato sauce
- parsley
- Make the pancakes: Mix the flour and salt in a bowl, beat in the egg and gradually beat in the milk to make a thin batter.
- Heat a little oil in an omelette or frying pan, and, when hot, pour in enough batter just to cover the base thinly.
- Cook for 1-2 minutes until firm, then toss or turn and cook the other side.
- Slide onto a plate and keep warm in a low oven (200F/100C/Gas Mark 1), and fry the remaining pancakes.
- Put the chosen Bolognese or chilli sauce into a saucepan and heat gently until piping hot, cooking right through, not just warming up.
- Put the hot pancakes onto a clean worktop and divide the hot filling between them.
- Roll up the pancakes and place them on a hot serving dish in the warm oven.
- Heat the chosen tomato sauce in the saucepan and when really hot pour over the pancakes.
- Garnish with parsley or watercress and serve.
