Gingerbread Cupcakes
- 5 tbsp room temp butter
- 1/2 cup caster sugar
- 1/2 cup molasses
- 1 egg
- 1 egg yolk
- 1/2 cup buttermilk
- 1 1/4 cup all-purpose flour
- 1 tbsp Cocoa Powder
- 1 tsp Ground Ginger
- 1 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1 tsp baking soda
- Preheat oven at 350F (175c)
- Mix together butter & sugar until light & fluffy
- One at a time add Molasses - egg - egg yolk
- In seperate bowl mix together dry ingredients
- Alternate between adding the buttermilk & dry ingredients to the creamed mix
- Stir until combined
- Bake for 20 minutes or until a sweker comes out clean
