Fresh Apricot Cake
- 1 cup flour
- 1 Tbsp. CALUMET Baking Powder
- 1/8 tsp. salt
- 1/2 cup (1 stick) butter, softened
- 3/4 cup sugar
- 2 eggs
- 1/4 tsp. almond extract
- 4 fresh apricots, thinly sliced (about 2 cups)
- 1 Tbsp. sugar
- Preheat oven to 350F.
- Mix flour, baking powder and salt in medium bowl; set aside.
- Beat butter and 3/4 cup sugar in large bowl with electric mixer on medium speed until light and fluffy.
- Add eggs, one at a time, beating well after each addition.
- Blend in extract.
- Add flour mixture; beat just until blended.
- Spread into greased 9-inch round cake pan.
- Top with apricot slices; sprinkle with 1 Tbsp.
- sugar.
- Bake 40 to 45 min.
- or until toothpick inserted in center comes out clean.
- Cool completely.
