Fresh Apricot Cake

  1. Preheat oven to 350F.
  2. Mix flour, baking powder and salt in medium bowl; set aside.
  3. Beat butter and 3/4 cup sugar in large bowl with electric mixer on medium speed until light and fluffy.
  4. Add eggs, one at a time, beating well after each addition.
  5. Blend in extract.
  6. Add flour mixture; beat just until blended.
  7. Spread into greased 9-inch round cake pan.
  8. Top with apricot slices; sprinkle with 1 Tbsp.
  9. sugar.
  10. Bake 40 to 45 min.
  11. or until toothpick inserted in center comes out clean.
  12. Cool completely.
