Bourbon Chicken
- 2 pounds Boneless Chicken Breasts, Cut Into Bite-Sized Pieces
- 2 Tablespoons Olive Oil
- 1/2 cups Finely Chopped Onion
- 1 clove Garlic, Minced
- 1/4 teaspoons Freshly Grated Ginger
- 3/4 teaspoons Crushed Red Pepper Flakes
- 1/4 cups Unsweetened Apple Juice
- 13 cups Light Brown Sugar
- 2 Tablespoons Ketchup
- 1 Tablespoon Apple Cider Vinegar
- 1/2 cups Water
- 13 cups Soy Sauce (I Use Lite Soy Sauce)
- Heat olive oil in a large skillet.
- Add chicken pieces; cook until lightly browned.
- Remove from pan; set aside.
- Add remaining ingredients to the skillet; heat over medium heat until well mixed and sugar is dissolved.
- Add chicken; bring to a boil.
- Reduce heat; simmer, uncovered, for 20 minutes.
- Serve over rice.
- Makes 3-4 servings.
