Bourbon Chicken

  1. Heat olive oil in a large skillet.
  2. Add chicken pieces; cook until lightly browned.
  3. Remove from pan; set aside.
  4. Add remaining ingredients to the skillet; heat over medium heat until well mixed and sugar is dissolved.
  5. Add chicken; bring to a boil.
  6. Reduce heat; simmer, uncovered, for 20 minutes.
  7. Serve over rice.
  8. Makes 3-4 servings.
