Banana ice cream soft scoop
- 3 small bananas mine weighed 224g
- 400 ml milk I used alpro unsweetened almond
- 200 ml Single cream
- 100 grams caster sugar I used Truvia alternative 0 cals
- 1/4 tsp Doves Farm Xanthan Gum see step 3. Optional but keeps ice cream from freezing solid in the freezer. but you can use alternative.
- Peel, slice & mash bananas till smooth
- Mix milk, cream & sugar in a mixing bowl then add the banana & mix until as smooth as you can
- Carefully sprinkle a little xanthan gum into mix and mix in I used a hand blender.
- Keep adding a little a time & mixing until it's all used.
- If you tip it all in it will go lumpy and gloopy.
- PLEASE READ UP ON XANTHAN GUM BEFORE USE.
- It can be purchased in Tesco..
- Turn machine on paddles turning pour mixture into machine & leave for 60 minutes.
- The paddles will squeak toward the end but will keep turning & beep & switch off at the end.
- Serve immediately or quickly scoop into container, lid & freeze.
