Eggless Corn Muffins Recipe
- 1 c. cornmeal
- 1/2 c. flour
- 1/4 c. sugar
- 1 teaspoon salt
- 2 teaspoon baking pwdr
- 1 c. lowfat milk
- 2 tbsp. melted shortening
- Sift and mix together the dry ingredients.
- Add in lowfat milk and shortening.
- Pour into greased muffin pans and bake in a moderate oven, 350 degrees, for 30 min.
- I use skim lowfat milk and butter to cut out cholesterol.
