Cheese Sauce
- 2 lb Butter
- 1 1/4 quart All Purpose Flour
- 2 gallon Whole Milk
- 3 quart Mixed Cheese
- 2 oz Minced Garlic
- 2 oz Kosher Salt
- 2 oz White Pepper
- Melt butter.
- Slowly add flour to form blonde roux.
- Slowly add milk.
- Whisk vigorously to avoid clumping.
- Add seasonings and simmer for 10 minutes.
- Add mixed cheeses.
- Label, date and store in cooler.
