South of the Border Pie

  1. In saucepan, cook onion in oil.
  2. Stir in chili powder, cumin, garlic, and salt.
  3. Cook 1 min.
  4. Cool.
  5. Stir in beans, rice, cheese, milk, and eggs.
  6. Spray a 10" microwave-safe pie plate with nonstick spray.
  7. Add rice mixture.
  8. Cook, uncovered, 50% power, 22 to 24 minutes or until center is just set, giving dish a quarter turn, twice.
  9. Let stand 10 mins.
  10. Garnish with chopped green pepper and serve with salso if desired.
