Raw Dark Chocolate Coconut Truffles

  1. In a small bowl mix, together the cocoa powder with the honey and coconut oil.
  2. Add the vanilla extract and salt and mix until well combined.
  3. The mixture will be a very thick paste.
  4. Add the agave inulin and mix until combined and can form the mixture into a big ball.
  5. Chill the mixture in the refrigerator for 10 minutes.
  6. The mixture will still be a little soft.
  7. Put some coconut shreds in a shallow bowl.
  8. Remove the dough from the fridge, roll it into small balls and coat with coconut shreds.
  9. Place balls on a tray.
  10. Refrigerate any leftovers.
