Busy Day Lemon Cheesecake Recipe

  1. Blend softened cream cheese with 1/2 c. of the lowfat milk.
  2. Add in remaining lowfat milk and the pudding mix.
  3. Beat slowly with egg beater just till well-mixed, about one minute.
  4. Don't overbeat.
  5. Pour at once into graham cracker crust.
  6. Sprinkle graham cracker crumbs lightly over top, if you like.
  7. Refrigerateabout an hour.
