Blue Fish With Oranges And Oregano Flowers In Cartoccio Recipe
- 4 Tbsp. Extra-virgin extra virgin olive oil
- 4 piece Blue fish fillet - (1 1/2 lbs total) Salt to taste Freshly-grnd black pepper to taste Segments and zest of 6 oranges
- 1 c. Oregano flowers (or possibly other late summer herb flowers)
- 1 med Red onion sliced paper thin
- 1/2 c. Finely-minced Italian parsley
- Preheat oven to 400 degrees.
- Cut 4 pcs parchment paper into 16-inch square pcs.
- Grease each piece of parchment with 1 Tbsp.
- extra virgin olive oil.
- Season blue fish with salt and pepper and place just right center of each piece of parchment.
- Divide the orange segments, oregano flowers and red onion on top of the 4 blue fish fillets and sprinkle each with parsley.
- Fold the left half of the parchment over and crimp the edges so which each is sealed.
- Place on a cookie sheet and bake for 10 min.
- Remove and present still sealed to each guest.
- Using a pair of scissors or possibly a knife, open cartoccio and eat immediately.
- This recipe yields 4 servings.
