Lattice Cherry Cheesecake

  1. Freeze cookie dough 1 hour.
  2. Slice into 1/8-inch slices.
  3. Arrange slices, slightly overlapping, on bottom and sides of greased 9-inch springform pan.
  4. With floured fingers, seal edges to form crust.
  5. Combine cream cheese, sour cream, sugar and extract; mix at medium speed on electric mixer until well blended.
  6. Add eggs one at a time, mixing well after each addition.
  7. Reserve 1/4 cup batter and chill.
  8. Pour remaining batter over crust.
  9. Bake at 350F.
  10. for 1 hour and 10 minutes.
  11. Increase oven temperature to 450F.
  12. Spoon pie filling over cheesecake.
  13. Spoon reserved batter over pie filling, forming a lattice design.
  14. Bake at 450F for 10 minutes.
  15. Loosen cake from rim of pan; cool before removing rim of pan.
