Mustard Chicken
- 4 whole chickens, cut into eighths (2-1/2 pound each)
- 12 teaspoon onion powder
- 3 tablespoons mustard powder
- 34 cup butter, melted
- 1 teaspoon lemon juice
- 34 cup oil
- 1 tablespoon salt
- 12 teaspoon ground red pepper
- 3 tablespoons warm water
- 13 cup dry white wine
- 1 12 cups dry breadcrumbs
- Mix together oil, salt, onion powder and pepper; dip chicken in oil.
- Place in shallow pan, bake at 375 until tender, about 35 minutes.
- Mix mustard with water; let stand 10 minutes; add butter, wine and lemon juice; mix well.
- Brush baked chicken with mustard mixture; coat with bread crumbs.
- Place chicken on racks in broiler pans; broil 6 inches from heat until browned, about 2 minutes on each side.
- 1 tablespoon of sugar may be added to this for an easy, smooth taste.
