Poor Man's Lamb Chop Casserole
- 6 neck /bbq chops
- 2 tbsp. brown sugar
- 1 tsp. ground ginger
- 1 tsp. curry powder
- 1 beef stock cube
- 1/4 cup tomato sauce
- 1-1/2 cup hot water
- 2 tbsp. cornflour
- 2 tbsp. water
- Brown chops in your George Foreman to remove most fat.
- Mix brown sugar, ginger, curry powder, crumbled stock cube, tomato sauce & hot water together.
- Pour over chops.
- Cover & simmer for 1 1/2 hours, or until chops are tender.
- Skim any fat from the surface using a ladle or paper towels.
- Mix cornflour & water together.
- Stir into meat & bring to the boil.
- Serve with mash & steamed vegetables.
- Enjoy!
