Bitter Green And Egg Salad Recipe
- 1/4 c. extra-virgin extra virgin olive oil
- 3 Tbsp. red wine vinegar
- 1 Tbsp. brown sugar
- 1 x garlic clove - (to 2) thinly sliced
- 1/4 tsp salt
- 1/4 tsp freshly-grnd black pepper
- 2 x heads bitter greens torn bite size (such as frisee, radicchio, endive, and dandelion)
- 2 x green onions thinly sliced
- 3 x hard-cooked Large eggs peeled, minced
- 1 Tbsp. capers
- In a large bowl, whisk together the oil, vinegar, sugar, garlic, salt, and pepper.
- Add in the greens and green onions and toss to coat well.
- Top with Large eggs and capers.
- This recipe yields 6 servings.
- Comments: For perfectly hard-cooked Large eggs, place Large eggs in a large pot with cool water to cover.
- Bring just to a boil then remove from heat.
- Cover pot and let stand 15 min.
- Rinse under cool water and peel.
