Soba Noodle Stir-Fry with Asparagus and Peanuts

  1. Bring a large pot of salted water to a boil, and cook soba noodles according to package directions.
  2. Meanwhile ... Heat oil in a wok or large skillet over medium-high heat.
  3. Add garlic and cook until fragrant, about 30 seconds.
  4. Add in asparagus, peppers and scallions.
  5. Cook, stirring, until asparagus is tender but still crisp, about 5 minutes.
  6. While veggies are cooking, make the sauce.
  7. In a small bowl, whisk together the soy sauce with the cornstarch.
  8. Whisk in grated ginger, sesame oil and cayenne.
  9. Pour sauce over the stir-fried vegetables and stir.
  10. Allow to simmer until sauce reduces down, about 3 minutes.
  11. Stir in peanuts and cook until heated through, about another 2 minutes.
  12. Spoon veggies and sauce over noodles.
  13. Can be served warm or at room temperature.
  14. Enjoy!
