Mexican Taco Bake

  1. Preheat oven to 375 degrees F. Coat a 13 x 9 baking dish and large nonstick skillet with cooking spray.
  2. Heat skillet over medium heat.
  3. Add green pepper and onion to skillet, cook, stirring occasionally, until softened, 10 minutes.
  4. Add beef; cook, stirring to break up, until brown.
  5. Add taco sauce; cook until slightly thickened, 3 minutes.
  6. Transfer to baking dish.
  7. Top with potatoes and salsa.
  8. Bake 20 minutes or until heated through.
  9. Preheat broiler.
  10. Broil 3 minutes or until lightly browned.
