Mexican Taco Bake
- 1 whole Green Pepper, Diced
- 1 whole Onion, Chopped
- 1 pound Ground Beef
- 1 jar (16 Oz. Size) Taco Sauce
- 2 cans (14 1/2 Oz. Size) Whole New Potatoes, Rinsed, Drained, Quartered
- 1/2 cups Salsa Con Queso
- Preheat oven to 375 degrees F. Coat a 13 x 9 baking dish and large nonstick skillet with cooking spray.
- Heat skillet over medium heat.
- Add green pepper and onion to skillet, cook, stirring occasionally, until softened, 10 minutes.
- Add beef; cook, stirring to break up, until brown.
- Add taco sauce; cook until slightly thickened, 3 minutes.
- Transfer to baking dish.
- Top with potatoes and salsa.
- Bake 20 minutes or until heated through.
- Preheat broiler.
- Broil 3 minutes or until lightly browned.
