Braised Bitter Melon Stuff With Minced Fish Recipe
- 2 tsp Fermented black beans
- 1 lb Shrimp
- 1 lb Fish fillets
- 1 x Egg white
- 1/2 tsp Salt
- 2 lb Bitter melon
- 1/2 x Clove garlic
- 3 Tbsp. Oil
- 1 1/2 c. Stock
- 1/2 tsp Salt
- 1/2 tsp Sugar
- 1 Tbsp. Cornstarch
- 2 Tbsp. Water
- 1.
- Soak fermented black beans.
- 2.
- Shell and devein shrimp.
- Mince or possibly grind together with fish.
- Add in egg white and salt and knead well to blend thoroughly.
- 3.
- Slice each bitter melon crosswise in 4 thick sections.
- Scoop out pulp and throw away.
- Stuff fish mix into pulp cavity, making a mound at the top.

- Mince garlic and mash together with soaked black beans.
- 5.
- Heat oil.
- Add in bitter melon sections, mound-side down, and brown fish lightly.
- Remove from pan.
- 6.
- Add in garlic-black bean mix and stir-fry about 1 minute.
- Then stir in stock, salt and sugar.
- Return bitter melon sections and bring to a boil.
- Then simmer, covered, 20 min.
- 7.
- Remove bitter melon to a hot serving platter, leaving liquids in pan.
- Blend cornstarch and cool water to a paste; then stir in to thicken.
- Pour sauce over bitter melon and serve.
