Oven Baked Pork Chops in a Chunky Tomato Sauce

  1. In a large skillet, heat olive oil and sear pork chops about 2 minutes on each side.
  2. Remove from the pan and place in a large baking dish.
  3. Saute onion and garlic in the drippings in the pan, about 4 minutes.
  4. Mix in flour and cook another 1 minute, then add in chicken broth while scraping the bottom of the pan with a wooden spoon.
  5. Bring to a boil, reduce heat to simmer, and let simmer until thickened.
  6. At this point, add in tomatoes, cumin, paprika, pepper and bring to a boil.
  7. Boil for another 5-7 minutes.
  8. Pour over pork chops and cover with foil.
  9. Bake at 325 degrees F for 2 hours.
