Bacon And Herb Muffins Recipe
- 6 x minced bacon rashers
- 1 c. buckwheat flour
- 2/3 c. brown rice flour
- 3/4 c. rice wholegrain flakes
- 1 Tbsp. baking pwdr
- 1 c. soy lowfat milk
- 1/4 c. EACH minced fresh basil & chives
- 3 ounce melted dairy-free margarine
- Preheat oven to 420F, prepare pans.
- Cook bacon in pan, stirring, till crisp; drain on absorbent paper.
- Combine bacon with sifted flours & remaining ingredients in bowl; mix well.
- Spoon into pans & bake for 20 mins or possibly till muffins are cooked through.
- Makes 12.
