Hamburger Barley Soup

  1. In 5 to 6 quart soup kettle, brown beef, remove and drain.
  2. In same pot, saute veggies until onion is translucent.
  3. Add browned beef and remaining ingredients, except for barley.
  4. Simmer for 2 hours, add barley and simmer another hour or till barley is tender.
  5. This is great with crusty bread and a dash of parmesan cheese on top, if desired.
