Banana Cupcakes with Strawberry Frosting

  1. The night before I want to make this I cut up the strawberries, add 1 tablespoon of sugar and a tablespoon of water.
  2. Mix and put in the refrigerator.
  3. The next day smash them up with a fork.
  4. If you don't want to do this step, you could use strawberry ham instead.
  5. CUPCAKE:
  6. Preheat oven to 350.
  7. Place 24 cupcake liners in cupcake pans
  8. In small bowl combine flour, baking soda, set aside.
  9. In large bowl , cream butter, sugar and brown sugar until light and fluffy.
  10. Beat eggs in one at a time.
  11. Mix in bananas
  12. Add flour mixture alternating with the sour cream
  13. Fill each cup 3/4 of the way full
  14. Bake for 25 to 30 mins
  15. FROSTING:
  16. In large bowl mix pudding, milk, and powdered sugar until combined.
  17. Fold in whip topping.
  18. Add strawberry mixture or jam and 6 drops red food coloring.
  19. Fold everything until combined.
  20. Place in refrigerator until ready to use
  21. An easy way to frost them is to put the frosting in a zip lock bag, cut of the end and swirl onto the cupcake.
  22. It is much faster too!
